Walleye Burger

BURGER:
5#    Fine Chopped Walleye fillets
½ ea        Yellow Onion
1 C        Chopped Herbs
3 ea        Eggs
1 tsp        Cayenne Pepper
1 tbsp        Rubbed Sage
1 tsp        Dry Thyme
5 C        Bread Crumbs
1 C        Heavy Cream
½ C        Heinz Chili Sauce
SALT

Process Onion in food processor
Mis Walleye, Onion and all other ingredients in a bowl and mold into 6oz patties
Pat in breading and sear on both sides in cast iron skillet until done through

BREADING:
4 C        Bread Crumbs
2 C        Yellow Corn Meal
Process Crumbs and Corn Meal in food processor

Horseradish-Chile Mayonnaise:
4 C        Mayonnaise
3 oz        Sambal Olek Chile Sauce
1 oz        Chili Sauce
1 oz        Lime Juice
5 oz        Horseradish

Mix all ingredients together in a bowl

TO SERVE:  Serve Patties on toasted bun with Chile Mayonnaise
