4 EA        6 OZ. CLEANED WALLEYE FILLETS
8 OZ        DICES FRESH PINEAPPLE
1 ½ TBSP    FRESH LIME JUICE
¼ TSP        GROUND CUMIN
4 TBSP        SLICED GREEN OINIONS
2 TBSP        DICED RED PEPPER
1 TSP        BROWN SUGAR
1 TSP        MINCED GINGER
½ TSP        DRY MUSTARD
OLIVE OIL
ROMAINE LETTUCE
SLICED RED ONION
4 EA KAISER ROLLS

RUB FILLETS WITH OLIVE OIL AND SEASON WITH SALT & PEPPER.
GRILL UNTIL JUST DONE
SET ASIDE

MIX TOGETHER THE PINEAPPLE, LIME JUICE, CUMIN, GREEN ONIONS, RED PEPPER, SUGAR, GINGER, DRY MUSTARD AND A LITTLE OLIVE OIL

BRUSH ROLLS WITH OIL, ADD SOME SALT & PEPPER AND GRILL
TOP THE BOTTOMS WITH LETTUCE LEAVES AND RED ONION

TO SERVE:  PLACE FILLET ON EACH ROLL BOTTOM AND TOP WITH PINEAPPLE SALSA MIX . . . SERVE WITH COLD BEER OR MARGARITAS!
